Recipe: Cilantro Pesto

1/2 cup chopped pecans 1 tsp cumin seeds
2 cups fresh cilantro leaves
1/2 cup grated Parmesan cheese
1/3 cup olive oil
1/4 cup cold water
2 garlic cloves
1 Tbsp lemon juice
1/2 tsp salt

1. Preheat oven to 350 degrees. Bake pecans in a single layer on a cookie sheet for 5 to 6 minutes (or until toasted and fragrant). Let cool for 10 minutes.
2. Place a skillet over medium heat until hot. Add the cumin seeds and cook, constantly stirring, for 1 to 2 minutes. Let them cool for 10 minutes.
3. In a food processor combine all ingredients and process until smooth. Stop occasionally to scrape sides down.
